California Sushi Rolls with Pears

These California Sushi Rolls with Pears are a fun spin on traditional California rolls with a sweet and salty flavor that everyone will love. Kids will enjoy spreading the rice and rolling up the sushi.
INGREDIENTS

Sushi Ingredients:

  • 8 sushi nori sheets
  • 2 cups cooked sushi rice (see recipe below)
  • 1 ripe pear, thinly sliced
  • 1 avocado, thinly sliced
  • 1 English cucumber, thinly sliced
  • 1 large carrot, thinly sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • Sesame seeds (optional)

Sushi Rice Ingredients:

  • 2 cups short-grain sushi rice
  • 2 1/4 cups water
  • 1/4 cup rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
DIRECTIONS

Sushi Rice Instructions:

  1. Rinse the sushi rice in a fine-mesh strainer until the water runs clear.
  2. In a medium saucepan, combine the rice and water. Let it soak for 30 minutes.
  3. Bring the rice and water to a boil, then reduce the heat to low and cover the saucepan.
  4. Simmer for 18 minutes, then remove from heat and let it sit covered for an additional 10 minutes.
  5. In a small saucepan, mix the rice vinegar, sugar, and salt. Heat over low heat until the sugar and salt dissolve.
  6. Transfer the cooked rice to a large bowl and pour the vinegar mixture over it. Use a rice paddle or wooden spoon to gently mix and coat the rice with the vinegar.
  7. Let the rice cool to room temperature before using it for sushi rolls.

Sushi Roll Instructions:

  1. Lay a sushi nori sheet on a flat surface. Spread a thin layer of cooked sushi rice on top, leaving about 1 inch of space at the top of the sheet. Have a small bowl of water nearby to help spread the rice without it sticking too much to your fingers.
  2. Place a row of sliced pears, avocados, and cucumbers on top of the rice, about 1 inch from the bottom of the sheet.
  3. Roll up the sushi tightly, using a bamboo mat or your hands to help shape it. Use a bit of water to seal the edge of the sheet.
  4. Repeat with the remaining ingredients to make 4 rolls.
  5. Slice each roll into 6-8 pieces using a sharp knife.
  6. In a small bowl, mix the soy sauce and honey to create a savory-sweet sauce for the sushi rolls.
  7. Serve the sushi rolls with dipping on the side for dipping. Sprinkle with sesame seeds, if desired.
