This gourmet quesadilla combines sweet, savory, and creamy flavors in every bite. Golden caramelized Anjou pears pair perfectly with tender roast beef, rich Brie, and sweet caramelized onions, all tucked into a crispy tortilla with a touch of peppery arugula. INGREDIENTS
  • 1 Anjou pear 
  • 2 tablespoons butter, divided
  • 1 tablespoon sugar
  • 4 flour tortillas
  • 6 to 8 slices roast beef
  • 1 small wheel brie cheese, sliced
  • ½ cup caramelized onions
  • ¾ cup arugula
DIRECTIONS
  1. Peel, core, and slice the pear into ¼-inch thick slices.
  2. Melt 1 tablespoon of the butter in a saute pan over medium heat. Add pear slices and sprinkle with sugar.  Caramelize on each side until golden brown.
  3. Place 2 tortillas on a flat surface. Cover each with half of the sliced roast beef, brie cheese, caramelized Anjou pears, caramelized onion and cover with arugula and two more tortillas.
  4. Melt remaining tablespoon of butter in the skillet over medium-high heat.  Place quesadillas in the pan and cook until just browned and crispy on each side, 2 to 3 minutes per side.  Serve immediately.
